Ingredients:
- 1 cup of Greek Yoghurt
- 1 tablespoon of Sri Lankan Coconut Spice
- 1 Cauliflower
- Salt and Pepper to Taste
Method:
- Preheat oven to 170 degrees.
- Mix Yoghurt, Salt, Pepper and Sri Lankan Coconut Spice. Take a pastry brush and brush the cauliflower with the yoghurt mix until very well coated. (An alternate version is to cut the cauliflower into florets and mix with yoghurt. This method takes less cooking time)
- Place on a lined baking tray and cook until the cauliflower is soft and fully cooked through. (Usually about 1 hour)
