ANZAC BISCUIT – refined sugar free
Ingredients:
125g butter
2tbs rice malt syrup
2tbs boiling water
1tsp bicarbonate soda
100g coconut sugar
85g desiccated coconut
90g rolled oats
150g plain flour
Method:
1. Preheat oven to 150 degrees
2. Put butter and rice malt syrup in a saucepan and stir until melted and just bubbling – take off heat
3. Mix bicarbonate soda and boiling water in a cup and then pour into butter/syrup mix and stir till frothy
4. Put all dry ingredients into food processor and chop up
5. Pour in wet ingredients and mix up again in food processor
6. Put mix into snack press and push through
