Caramel Coconut Slice

2 cups of plain flour

1 cup of caster sugar

3 eggs

125g of cold butter cut into cubes

1 teaspoon of Flavourista Vanilla Syrup

3/4 cup of your choice of filling (Jam, Caramel Sauce etc)

2 cups of coconut 🥥


1. Preheat oven to 180 degrees.

2. Grease and line a lamington tin

3. Process flour and butter until it resembles breadcrumbs

4. Add in 1 egg and vanilla syrup

5. Process until a dough forms

6. Press dough into your tin

7. Bake for 20 minutes

8. Remove from oven and spread your choice of jam or sauce over

9. In a mixing bowl, mix remaining 2 eggs and sugar

10. Add coconut and mix well

11. Pour topping over the slice base

12. Bake for a further 25 minutes or until golden

13. Cool in tin then slice
