Caramel Coconut Slice

Ingredients:

2 cups of Plain flour

1 cup of Caster sugar

3 eggs

125g of cold butter, cut into cubes

1 teaspoon of Flavourista Vanilla Syrup

3/4 cup of your choice of filling (Jam, Caramel Sauce etc)

2 cups of coconut

Method:

1. Preheat oven to 180 degrees.

2. Grease and line a lamington tin.

3. Process flour and butter until it resembles breadcrumbs.

4. Add in 1 egg and vanilla syrup.

5. Process until a dough forms.

6. Press dough into your tin.

7. Bake for 20 minutes.

8. Remove from oven and spread your choice of jam or sauce over.

9. In a mixing bowl, mix remaining 2 eggs and sugar.

10. Add coconut and mix well.

11. Pour topping over the slice base.

12. Bake for a further 25 minutes or until golden.

13. Cool in tin then slice.
