Apricot Bites – Kye Underhill

Ingredients:

  • 300g dried apricots
  • 60g pitted dates
  • 70g Desiccated coconut
  • 2 tablespoons Desiccated coconut for coating, optional

Method:

  1. I soaked the apricots & dates in boiling water for 5-10 minutes.
  2. Drain well before putting them into the food processor. I always find soaking dried fruit works better for raw recipes.
