Apricot Bites – Kye Underhill

Ingredients

* 300g dried apricots

* 60g pitted dates

* 70g dessicated coconut

* 2 tablespoons desiccated coconut for coating, optional

Method:

I soaked the apricots and dates in boiling water for 5-10 minutes, then drained well before putting them into the food processor. I always find soaking the dried fruit works better for most raw recipes.
