I had a craving for doughnuts all day today.
I decided to make our own. I honestly hate making anything with Gluten Free flour and thought let’s give these a try.
Ingredients
Dry
- 2 cups gluten free plain flour
- ⅓ cup caster sugar
- 2½ tsp gluten free baking powder
- ½ tsp xanthan gum (omit if already in flour blend)
Wet
- 2 eggs
- ½ cup milk (dairy free or lactose free)
- 2 tbsp dairy free spread or butter melted
For frying
- Vegetable oil
Coating
- ½ cup sugar + 1 tsp cinnamon
- or icing sugar
Method
1. Combine dry ingredients
In a large bowl, whisk together:
flour, sugar, baking powder, and xanthan gum.
2. Mix wet ingredients
In a separate bowl, whisk:
eggs, milk, and melted spread until smooth.
3. Bring together
Pour wet into dry.
Gently mix with a spoon or spatula until combined.
👉 Don’t overmix — just until smooth.
👉 Batter should be thick and scoopable, like a soft dough.
4. Rest batter
Let sit 10–15 minutes
(This step is important for gluten-free texture)
5. Heat oil
Heat vegetable oil to 170–180°C
6. Fry doughnuts
- Scoop heaped tablespoons of batter
- Carefully drop into oil
- Fry 2–3 minutes per side until golden
7. Drain & coat
- Drain on paper towel
- Roll in cinnamon sugar or dust with icing sugar while warm

- 270 g gluten free plain flour
- 70 g caster sugar
- 2.5 tsp gluten free baking powder
- ½ tsp xanthan gum (omit if your flour already contains it)
Wet
- 2 eggs
- 120 ml milk (dairy free or lactose free)
- 2 tbsp dairy free spread, melted
For frying
- Vegetable oil
Optional coating
- Cinnamon sugar or icing sugar
Method
1. Mix dry ingredients
Add all dry ingredients to bowl.
Mix 5 sec / speed 5
Scrape down sides.
2. Add wet ingredients
Add eggs, milk, and melted butter.
Mix 10 sec / speed 4
Scrape down, then mix 5 sec / speed 4
👉 Batter should be thick and scoopable (like a soft dough, not runny).
3. Rest batter
Let sit in bowl 10–15 minutes
(This helps the xanthan gum and flour hydrate and firm up)
4. Heat oil
Heat vegetable oil to 170–180°C
5. Fry doughnuts
- Scoop heaped tablespoons of batter (or use a small scoop)
- Gently drop into hot oil
- Fry 2–3 minutes each side until golden
👉 Cook in batches, don’t overcrowd.
6. Drain & coat
- Drain on paper towel
- Toss in cinnamon sugar or dust with icing sugar while warm
