Sweet Potato, Pea & Salmon Patties


600  g sweet potatoes peeled chopped into pieces. Steamed and cooled.

250g pink or red tinned skinless and boneless salmon

1/4 corn or peas

Panko breadcrumbs

2  spring onions finely chopped

1 egg

1⁄4 teaspoon of lemon & chilli salt

2 tablespoons Chive & Onion spice mixed into the breadcrumbs

Cooking spray to coat


  1. Preheat Oven to 180 degrees
  2. Steam sweet potato and peas and cool
  3. Mash sweet potato and add to a large bowl
  4. Add in peas, egg, spring onions, seasons
  5. Mix well
  6. Add in drained salmon and mix again
  7. Shape into patties
  8. Crumb patties and place on a lined baking tray
  9. Spray with cooking oil or spray
  10. Bake for 10 mins on each side and serve with salad or vegetables
