Caramalised Banana & Coconut Pancakes

Last weekend we went to Brisbane to visit my family. There are so many bargains to be found there. My parents live near two amazing fruit shops. Bananas ๐ŸŒ๐ŸŒ๐ŸŒ were 44 cents per kilogram. That is crazy! 

Anyway, typical me went overboard and bought way too many! 

What do I do with them all! Pancakes were a good start.

Ingredients for Pancakes: 

  • 1 cup SR Flour
  • 1 cup coconut milk
  • 1/2 cup dessicated coconut
  • 2 eggs
  • 1 heaped tablespoon white chocolate powder
  • Pinch of salt

Ingredients for Sauce:

  • 2-3 ripe bananas sliced
  • 1 tin of coconut condensed milk (used regular condensed milk if you can’t find the coconut version- usually located in the Asian food aisle) 
  • 1 tablespoon butter
  • 1/4 teaspoon gingerbread spice 


Method:

In a large bowl add dry ingredients and then make a well in the centre. Add wet ingredients into the well. Whisk until batter is smooth.


Pan fry until golden and fluffy.

Set aside on a plate 

To make sauce heat coconut condensed milk and butter. Once golden add bananas and gently toss bananas through the sauce.
