Ingredients for Pancakes:
- 1 cup SR Flour
- 1 cup coconut milk
- 1/2 cup dessicated coconut
- 2 eggs
- 1 heaped tablespoon white chocolate powder
- Pinch of salt
Ingredients for Sauce:
- 2-3 ripe bananas sliced
- 1 tin of coconut condensed milk (used regular condensed milk if you can’t find the coconut version- usually located in the Asian food aisle)
- 1 tablespoon butter
- 1/4 teaspoon gingerbread spice
Method:
In a large bowl add dry ingredients and then make a well in the centre. Add wet ingredients into the well. Whisk until batter is smooth.Pan fry until golden and fluffy.
Set aside on a plate
To make sauce heat coconut condensed milk and butter. Once golden add bananas and gently toss bananas through the sauce.
