I was fortunate enough to purchase bags of passionfruit from the local shop at Widgee. So fresh and delicious!
We attended a book fair yesterday and i picked up some Lemon Curd. What a perfect combination – Passionfruit and Lemons.
I have omitted the sugar component from this recipe due to filling them with lemon curd. Add in 1/4 Cup of Caster sugar if you want the muffins sweeter.
2 cups of Self Rasing Flour
1/4 Cup Melted coconut oil or butter
1 Cup Milk
Pulp from 4 Passionfruit
1 Heaped Tablespoon of White Chocolate Powder
OPTIONAL: 1/4 Cup of Sugar & White Chocolate Chips 1/4 Cup
Preheat oven to 170 degrees (Fan Forced)
Mix all ingredients and stir until combined. The mixture will be quite thick.
Place into lined muffin trays. Bake for 15-20 minutes until cooked. Cool completely on a wire rack.
I filled my muffins with lemon curd, you can also ice these with passionfruit icing.
These muffins are perfect for lunchboxes – Freeze without the icing 🙂
