I of course had to put my own spin on things! I had a pear and some strawberries to use up so instead of banana on the caramel base, they were my chosen fruit.
To make caramel
1 cup of Brown Sugar
1/2 Cup butter
1 tablespoon of Caramalised Spice Rum Balsamic
Keep stirring until smooth and glossy.
2 cups Self Raising Flour
1/2 cup melted butter
1 tablespoon of coconut sugar (I used a limited edition coconut spiced sugar)
1 teaspoon of Pumpkin Pie spice
4 ripe bananas mashed
Extra sliced banana or your choice of fruit for caramel layer
Mash Bananas and add remaining ingredients. Mix with a fork until smooth.
Pour caramel on base of square cake tin.
Top with sliced banana (I used pear and strawberries)
Pour cake batter on top and bake at 180 degrees for 45 mins.
