My Mumma has been making this family noodle dish for years! Absolutely delicious
1 packet of rice stick noodles
2 cloves garlic
2 chicken breast fillets diced
1/2 sugar loaf cabbage sliced
2 carrots thinly sliced
1 broccoli head sliced
2 celery stalks
2-3 tablespoons of Vindaloo Paste
Ghee or butter to fry chicken
Prepare noodles – boil water and cover noodles until cooked. Drain and set aside.
Heat butter/ghee, fry onion & garlic, add Vindaloo Paste and fry until fragrant.
Add diced chicken and vegetables.
Add the noodles once vegetables are cooked.
Mix well and serve.
Garnish with shallots and cashews if desired.
