Ingredients:
1 packet of plain biscuits (arrowroot)
1 tin of condensed milk
1 – 2 cups of desiccated coconut
1 tin of pineapple
1 tablespoon of White Choc Powder http://renitahenrymay.yourinspirationathome.com.au/
Method:
Drain a tin of pineapple, crushed, slices or pieces.
Next take a packet of plain biscuits (I used arrowroot) and place into a food processor or into a snap lock bag and crush with a rolling pin)
Grind to a chunky crumb. It doesn’t matter if there are a few pieces as they will soften.
Add 1 tin of condensed milk and 1 tablespoon of Yiah white chocolate powder.
Squeeze all excess moisture from the pineapple.
Then add add to biscuit mixture.
Mix well. I added 1-2 cups of coconut at this stage to thicken the mixture.
This is the consistency it should be. It is very sticky so wet your hands and shape the mixture into balls.
Roll balls into coconut.
All completed. Place in fridge to set and enjoy for a snack. These are perfect in lunch boxes.
