Ingredients:

4 eggs

1/4 cup milk

Handful of chopped spinach

1 grated carrot

1/2 cup chopped salami

1/4 cup grated or shaved cheese of your choice

Spring onion

Zucchini

Capsicum finely diced

Method:

1.Preheat oven to 170 degrees.

2.Whisk eggs and milk. Add remaining ingredients and stir well.

3.Pour into taco boats. Cook for approximately 15 minutes.

Use whatever fillings you have in the fridge;

Mushrooms, Spinach, Feta, Sweet Potato, Pumpkin, Rocket

Capsicum, Tomato, Carrot, Smoked salmon, Roast chicken

Onion, Garlic
