Creamy Sweet Potato & Salami Pasta
1 Sweet Potato Grated
1 Zucchini grated
2 cloves of garlic
1 onion finely diced
2 tablespoons of garlic oil
1/4 cup of fresh parsley leaves finely chopped
1 400g tin of diced tomatoes
300ml of cream
1 cup of water
1 tablespoon of vegetable stock or add a stock cube
1 tablespoon of Italiano Spice
150g of your choice of Salami, Chorizo or Bacon – diced finely
Method:
1. Place oil in saucepan, add onion and garlic and fry gently until soft
2. Add in zucchini and sweet potato
3. Cook until tender
4. Add tomatoes, spices and remaining ingredients.
5. Summer gently until cooked
6. Serve with freshly cooked pasta
