Method:
Cut sweet potatoes in half, place into a baking dish and bake at 180-200 degrees for approx. 45 minutes or until the centre is soft.
Remove from oven and mash centre with a fork until light and fluffy.
I topped these with spring onion, diced tomatoes and Greek yoghurt. Kids sprinkled Country Onion and Chives Dip mix on theirs.
The filling options are endless; Ham and pineapple, Tuna and white sauce, seafood etc.
