We love sweet potatoes in our household as hubby is a gym junkie!
Cut sweet potatoes in half, place into a baking dish and bake at 180-200 degrees for approx 45 minutes or until the centre is soft.
Remove from oven and mash centre with a fork until light and fluffy.
I topped these with spring onion, diced tomatoes and Greek yoghurt. Kids sprinkled country onion and chives dip mix on theirs.
The filling options are endless. Ham and pineapple, tuna and white sauce, seafood etc.
