Happy Easter to all!
I had a craving for Hash Browns so I thought I would make my own from our plentiful supply of sweet potatoes.
Approximately 1kg of Grated Sweet Potato
Nutmeg or Pumpkin Pie Spice
Coconut Oil or Olive Oil for Frying
Salt & Pepper
Grate Sweet Potato and Place into a large bowl.
Add 2 eggs, nutmeg/ spice, salt and pepper and mix well until combined.
Shallow fry until golden on each side. Serve with my cheats poached eggs and Greek Yoghurt.
We also had half a bowl of the mixture left as there are only 3 of us here today, so i poured it into a baking dish and baked it to make a sweet potato savoury slice.
Take a piece of plastic wrap, place it over a shallow bowl or ramekin dish. Crack an egg into it. Fold plastic wrap up and sit it in a pot of boiling water. Cook until desired.
You can spray the glad wrap with cooking spray if you wish to prevent sticking.
Another way to do this is to crack an egg in a shallow bowl in the microwave and cook for 30 seconds or so. (Do not use plastic wrap this way)
