Homemade Ricotta Cheese



Our daughter has stopped her bottle now she is a ‘Big Girl’

So we have had excess litres of milk in our fridge. I hate wastage so I decided to try my luck at making some ricotta before the milk went out of date.


2L of Full Cream Milk

1/3 Cup of Lemon or Lime Juice

1 teaspoon of your choice of salt. (I used French Perfume Salt from Your Inspiration at Home)


Bring Milk to the Boil over a high heat.

Remove from heat and add lemon/lime juice and salt. Stir and then leave for approximately 10-15 minutes. In this time after the initial stir, do not stir.

Strain using a muslin cloth or a new chux cloth.

Serve with biscuits, use in lasagne or cannelloni. This will keep covered in the fridge for a few days.
