Caramalised Banana & Coconut Pancakes

Last weekend we went to Brisbane to visit my family. There are so many bargains to be found there. My parents live near two amazing fruit shops. Bananas 🍌🍌🍌 were 44 cents per kilogram. That is crazy! 

Anyway, typical me went overboard and bought way too many! 

What do I do with them all! Pancakes were a good start.

Ingredients for Pancakes: 

  • 1 cup SR Flour
  • 1 cup coconut milk
  • 1/2 cup dessicated coconut
  • 2 eggs
  • 1 heaped tablespoon white chocolate powder
  • Pinch of salt

Ingredients for Sauce:

  • 2-3 ripe bananas sliced
  • 1 tin of coconut condensed milk (used regular condensed milk if you can’t find the coconut version- usually located in the Asian food aisle) 
  • 1 tablespoon butter
  • 1/4 teaspoon gingerbread spice 


Method:

In a large bowl add dry ingredients and then make a well in the centre. Add wet ingredients into the well. Whisk until batter is smooth.


Pan fry until golden and fluffy.

Set aside on a plate 

To make sauce heat coconut condensed milk and butter. Once golden add bananas and gently toss bananas through the sauce.
