Smashed Potatoes with Olives

My favourite kitchen tool and I’m sure Hubby would agree with me is our microwave jacket potato maker. Best $5 ever spent.

Ingredients 

4 potatoes (washed and I left skin on )

1/4 cups diced olives 

1 heaped tablespoon tapanade dip mix 

1/2 cup Greek yoghurt 

Method: 

Cook potatoes until soft, then mash with a potato masher. 

Add in remaining ingredients while potatoes are still warm and mix well. 

Serve as a side dish.
